Dental calculus study uncovers varied diet of premodern Osaka commoners
Researchers studying premodern Japan have long relied on cookbooks, kitchen waste pits, and skeletal remains to sketch broad dietary patterns, noting a heavy dependence on marine fish and C3 plants. However, these traditional sources leave many questions unanswered: which specific species or tissues did ordinary people eat, and how did dietary access vary across social strata? A new interdisciplinary study combining archaeobotanical analysis, residue chemistry, and advanced isotope techniques aims to fill these gaps by identifying individual food items at a finer resolution.
The team examined charred plant remains, fish scales, and trace residues on pottery shards from several rural and urban sites dated between the 12th and 19th centuries. By comparing isotopic signatures of human bones with those of local fauna and flora, they were able to distinguish between freshwater and saltwater fish consumption and to detect the use of specific crop varieties. Preliminary results suggest that lower‑class households incorporated a wider range of low‑value fish and tubers, while higher‑class families favored more expensive shellfish and imported rice. These findings provide a more nuanced picture of everyday nourishment and social inequality in premodern Japanese society.
